Fish Drying Methods

There are two kinds of drying of fish, one is to use the sun to dry, and the other is to use the dryer to dry. The traditional drying method is sun-drying, which is economical and economical, but in rainy days, it cannot be sun-dried, resulting in losses. Moreover, the traditional drying of dried fish will cause contamination of dried fish and bacteria. The fish dryer uses a closed-loop design, which is not affected by the weather, and there is no need to worry about the dried fish being polluted. The methods of drying fish
1. According to the size of the fish, two forms of dorsal and ventral are used. The back section is generally used for large and thick fish. When cutting, the knife is inserted from the second scale under the dorsal fin of the fish, and when the knife reaches the skull of the fish, it is slightly inclined to cut in the middle of the skull. Remove the internal organs and tooth mounds, and gently scrape off the blood stains on the spine and the black mucosa in the abdomen with a razor blade. If the fish is large, it should be under the back bone and in the thick part of the meat on the other side. After dissection, the internal organs are removed.

2. Washing: Wash the de-viscered fish in sea water to remove the dirt and mucus on the inside. Then the two meat noodles are spread out and stacked on top of each other, and placed in a clean container to drain the water and wait for drying. Prevent the meat surface from turning red due to random stacking.

3. Salting: Determine the amount of salt according to the size of the fish, generally 18-24 kg of salt per 100 kg of fish. Winter and spring are less, summer and autumn are more. When marinating, rub the salt evenly over the fish. Then put it in the pickling pool. After 4 to 5 hours, add a layer of sealing salt, cover the surface with bamboo, and press the stone. Immerse the fish in brine to fully absorb the salt and remove the water.

4. Drying: wash the fish body once to remove the contaminated dirt, drip dry water, and then discharge it on a special drying tray. Advance the drying room for dried fish, turn on the control panel of the main engine for drying, and the drying process is fully controlled by the computer version without manual duty. Generally, the drying time of marine fish is about 22-28 hours. It can also be hung in the sun to dry.

If traditional air-drying relies on natural air-drying, a large area of drying field is required. Affected by the weather, the labor intensity is high, and it is easy to breed flies and food hygiene. The sulfur content exceeds the standard, the color and luster are different, and the temperature and humidity are difficult to control.
