French Fries Making

The First Method

Choose potatoes for fries, preferably fresh. Before frying the french fries, we pre-process the potatoes, wash and peel them and set aside.The following introduces the important steps of french fries. You can easily make delicious fries in just three steps.
1. Cut the french fries into uniform shapes. Do not cut them too finely. Potatoes that are cut too finely are easily broken when fried. Put the cut potatoes in water and add salt to soak them for ten minutes to 20 minutes. Compared with water, adding salt water is easier to remove the starch in the potatoes, make the potato strips more crispy.
2. Remove the soaked potato strips and put them in a bowl, add water to the pot, put the potato strips in after the water boils, and cook until they are five mature. Blanch the potato strips in water for one minute. Take it out and drain the water, put it in a fresh-keeping bag and then put it in the freezer layer of the refrigerator for about two hours. This step can increase the crispness of the potato strips.
3. Put an appropriate amount of cooking oil in the pot. When the oil is hot, you can put the potato strips in. You don't need to wait until the oil temperature is too high, otherwise the potato strips will be easily burnt. When the potato sticks are slightly yellow, turn up the heat and continue to fry them until they turn golden brown and take them out. At this time, the french fries are cooked.
The above is the first way to make french fries. There are a few points to pay attention to when frying french fries.
1. Selection of potatoes: potatoes in the shape of strips should be selected, the appearance is more uniform, and the cut potato strips are more beautiful.
2. A small amount of edible salt should be added when the potato strips are soaked, so that the starch in the potato strips can be soaked more cleanly.
3. When the potato strips are blanched, the water can be taken out for one minute. It is not easy to take too long. If the time is too long, the potato strips are easy to be cooked.
4. When frying the potato chips, put them in when the oil temperature is 50% hot, so that the potato chips can be fried from the inside to the outside, and the taste is more crispy.
French fries can be served with salad dressing or ketchup. The two kinds of sauces have different tastes, but they are both delicious. If you like to eat them, you can eat them directly.

The Second Method

Step 5: Continuous Frying. The continuous fryer allows the strips to be quickly fried in 180° oil for about 40 seconds to avoid sticking and extend shelf life.
Step 6: Deoiling. Use a deoiling machine to remove oil from the surface of the fries. Through high frequency vibrating to achieve deoiling purpose.
Step 7: Freezing. Using the freezering machine, through mechanical vibration and wind pressure, the fluidized quick freezer floats the product on the stainless steel mesh belt, freezes the product and prevents sticking to achieve IQF.
Step 8: Packaging and Storage. Put the french fries in the automatic weighing packing machine for packaging and storage. This machine can automatically fill nitrogen, automatically weigh automatically seal, and automatically pack.
